Hamantashen in a Hurry!

This recipe is a classic- originally published in a community cookbook by my talented friend, food writer and cookbook author Sue Epstein. Talk about Purim Miracles! It is fast and delish!

Ingredients

1 package yellow cake mix (like Duncan Hines)
1 cup all-purpose flour
2 eggs
2 + tablespoons water
1 cup fruit preserves, any flavor or fruit filling like Solo brand

Directions

Preheat the oven to 375ºF. Cover cookie sheets with parchment paper.

In a large bowl or using a stand mixer, combine cake mix and flour. Stir in eggs and water to form a rollable dough. If too crumbly add another tablespoon of water.

On a lightly floured surface, roll the dough out to about 1/8 inch thickness. Cut into 3 inch round circles and place 2 inches apart on the parchment covered cookie sheets.

Place a teaspoon of filling into the center of each cookie and pinch the sides to form three corners. Moisten with water if necessary for sealing.
Bake for 8 to 10 minutes in a preheated oven, or until lightly browned. Allow cookies to cool for 1 minute on cookie sheets, Remove to wire racks to cool completely.

Notes

 Be creative with your fillings! Chocote, Nutella, cinnamon, nuts. Use any flavor cake mix you like, except Angel Food.
